Oil is the extract from the fatty part of a seed, nut, fruit or grain, therefore it lacks important substances such as fiber, proteins, vitamins and minerals. It is always better to use the oil's food source rather than the oil itself. The advantage of vegetable oils over animal fat is that they do not contain cholesterol and often contain lower amounts of saturated fat - two things health organizations recommend we reduce in our diet. Many vegetable oils are also good sources of vitamin E & K and sterols that contribute to good health. Can you recognize the oils in the picture?
