Did you know that eating cooked carrots will provide you with more nutrition than consuming them raw? Many times, high temperatures reduce the nutritional value of vegetables, but with carrots it’s the other way around!

Nutrition facts about carrots

Carrots contain beta-carotene (carotenoid), a provitamin the body converts into vitamin A, which is said to have anti-cancer properties as well as improving hair growth, eye health, and heart health. Studies show that boiling and steaming carrots tends to increase the availability of antioxidant carotenoid found in carrots, making it easier for the body to absorb and then convert them to Vitamin A. 

Pro-tip: adding a little bit of oil can actually help your body absorb the beta-carotene better (and probably help with the flavor too).
